When brewing coffee by hand drip, even when the same dripper and coffee beans are used, the pouring method of hot water, the number of pitches, and the combination with other equipment such as paper filters can have various effects on the flavor and concentration, such as acidity and sweetness of the coffee to be extracted.
The combination of coffee utensils and extraction recipes can be expanded infinitely.
We want you to enjoy coffee more at home with the ORIGAMI dripper.
With this in mind, we would like to introduce recipes for brewing delicious coffee beans from coffee shops across Japan using the ORIGAMI Dripper.
We hope you will try this recipe at home as one of the recipes for the ORIGAMI Dripper.

In the first installment, Mika Jackson, head barista at FUGLEN HANEGI KŌEN, shares a recipe for drinking Fuglen beans both hot and iced.

Preparations

・Dripper :  ORIGAMI Dripper Air S

・Server :Glass Coffee Server with HARIO

・Paper Filter :Paper Filter [Cone]*In this time, 3-4 cups size is used.

・Coffee beans 15g (medium-fine ground)

・Hot water 250g 90-93°C

・Scale

・Mug


[If brewed on ice]

・Cane Sugar 3g

・Ice

Kenya AA KANGOCHO

The flavor is characterized by a distinct Kenyan fruitiness, like black currant and stone fruit, with a jammy sweetness from the fruit being cooked down.

Recepi

[Advance preparation]

(1) Set a cone-shaped paper filter in the dripper.

(2) Pour hot water through the paper filter.

(3) Put coffee beans in the paper filter.

(4) Shake the dripper to flatten the coffee beans.


[Start of brewing]

(1st pouring) 0'00 - 0'40 sec. 

Pour 40g of hot water while turning to steam the coffee beans

(2nd pouring) 0'40 - 2'00 sec. 

Pour 40g of hot water again, turning the entire coffee bean. When the amount of hot water reaches 80g,

Bring the tip of the kettle to the center of the dripper and continue pouring to a single point in the center until it reaches 250g

The brewing time should take 2 minutes to 2 minutes and 30 seconds to complete.

Finally, stir the coffee with a spoon to even out the liquid.


[For iced coffee]

(1) To the coffee brewed according to the above procedure, add 3g of cane sugar and stir with a spoon to balance the flavor.

(2) Place the server in a bowl filled with ice and cool rapidly from the outside.

(3) When the coffee is completely cooled, it is ready to drink. Pour appropriate amount of ice and coffee into a glass.
